I melt the chocolate directly in the bag in a water bath - it's clean and I have less loss
However, the couverture should be tempered before processing. Simply melting is only half the story. There are several videos about this here on YT. It also sets quicker.

However, I do it a little differently. I also use a large metal bowl for melting. When the chocolate has melted, I use a silicone scraper and always spread some chocolate on the inside edge, let it sit there for a few seconds and then scrape it back down into the chocolate pool. I repeat this over and over again until the chocolate sets.
Another option is so-called vaccination. To do this, the chocolate is melted and a small part is grated. Once the chocolate has cooled down a little (37-38°C), the grated chocolate is stirred in.

I notice that the chocolate shouldn't be too liquid, otherwise it will all flow downwards and, in the worst case, it will lump together. But it has to be liquid enough so that you can paint with it. Getting the chocolate like this is definitely difficult.
Ich backe total gerne und bekoche andere auch gerne und verziere dann auch. Was das betrifft, wäre ich in der gehobenen Gastro wohl gut aufgebhoben, nur komme ich leider mit dem Druck und den zeitlichen Anforderungen nicht so gut klar, also bleibe ich in der heimischen Küche und beglücke meine Familie und Freunde mit Leckereien für Auge und Zunge 🙂 😀
