Hello Bettina, I use the White Chocolate Backfee couverture from Netto for modeling chocolate. Modeling chocolate used to work well for me. Now the white modeling chocolate is crumbling. It works well with dark chocolate. Where is the mistake? I work with glucose. Thanks for the answer in advance.

Why should it be refrigerated overnight to harden if it is supposed to be kneaded soft again the next day? Surely you could save yourself the hours in the fridge and use it straight away without refrigeration?

After I stirred it in yesterday and left it overnight to cool, it can't be processed today. A lot of fat comes out when kneading and tears when rolling out.
